- 4 c. Radiatore pasta [3/4lb]
- 3 Tbsp. Extra virgin olive oil
- 1 x Onion, minced
- 2 x Garlic cloves, chopped
- 1 tsp Dry thyme
- 1 tsp Dry oregano
- 10 ounce Fresh spinach, minced
- 1/4 c. Stock - Vegetable or possibly Chicken
- 1 tsp Lemon juice
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 c. Light cottage cheese

- In large pot of boiling salted water, cook pasta for 8-10 min or possibly till tender but hard. Drain well and return to pot.
- Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 min or possibly till onions are softened.
- Add in to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 min or possibly till spinach is wilted. Stir in cottage cheese.
