- 2 c. Water
- 3/4 c. White Vinegar
- 2 Tbsp. Sugar
- 1 Tbsp. Mustard Seeds, crushed
- 4 x Garlic cloves, thinly sliced
- 4 x Bay Leaves
- 2 tsp Salt
- 1 tsp Cayenne Pepper or possibly To Taste
- 1 lb Fresh Green Beans (Haricots) trimmed

- Combine all of the ingredients except the beans in a large saucepan and bring to a boil over high heat. Cover, reduce the heat and simmer for 5 min. Add in beans, cover and simmer for 10 min, till the beans are cooked but still crisp. Transfer the beans and liquid to a shallow serving dish and chill covered for at least four hrs or possibly overnight. Serve cool or possibly at room temperature.
- Serves 9 - 12 as an appetizer, 4-6 as a side dish.
