- 1 1/4 c. graham cracker crumbs
- 1/4 c. butter, melted
- 1 (8 ounce) plus 1 (3 ounce) pkg. cream cheese, softened
- 1/2 c. sugar
- 1 T lemon juice
- 1/2 teaspoon vanilla
- Dash salt
- 2 large eggs
- 1 c. dairy lowfat sour cream
- 2 T sugar
- 1/2 teaspoon vanilla

- Put together crumbs and butter. Press into buttered 8-inch pie plate, building up the sides.To make filling: Beat cream cheese till fluffy. Gradually blend in 1/2 cup sugar, lemon juice, vanilla and salt. Add in large eggs, one at a time, beating after each. Pour filling into crumb crust. Bake in slow oven (325 degrees) for 25 to 30 min, or possibly till set. Put together lowfat sour cream, 2 tbsp sugar and the vanilla. Spoon over top of pie. Bake 10 min longer. Cool. Refrigerate several hrs. Serve with red-ripe strawberries.
