.%20%20These%20were%20dark%20times%20especially%20when%20the%20Burgermeister%20Meisterburger%20no%20longer%20let%20the%20children%20play%20with%20toys%20or%20celebrate%20Christmas.%20%20But%20that's%20not%20the%20Austria%20of%20today.%20%20Austria%20has%20once%20again%20become%20the%20lovable%20cabbage%20picking%20nation%20it%20was%20meant%20to%20be.%3C/p%3E%3Cp%3EVienna,%20the%20capitol,%20is%20actually%20the%20heart%20of%20Austria%20and%20it's%20cuisine.%20%20Perhaps%20it's%20most%20famous%20creation%20is%20Weiner%20Schnitzel.%20%20%20A%20simple%20yet%20tasty%20dish%20of%20pounded%20out%20veal%20fillets%20(veal%20is%20traditional%20but%20some%20Austrians%20prefer%20using%20pork),%20breaded%20and%20fried.%20%20The%20crispy%20steak%20is%20generally%20served%20with%20parsley%20and%20lemon.%20%20That's%20it.%20%20So%20good%20it%20hurts.%20%20Here's%20my%20recipe:%3C/p%3E%3Cp%3ESeason%20the%20veal%20with%20salt%20and%20pepper.%20%20Dredge%20in%20flour.%20In%20a%20shallow%20dish,%20beat%20the%20eggs%20with%201%20tablespoon%20oil,%20salt%20and%20pepper.%20Coat%20the%20veal%20with%20egg%20mixture,%20then%20with%20bread%20crumbs.%20%20%20Heat%201/4%20cup%20oil%20in%20a%20heavy%20skillet%20over%20medium%20heat.%20Fry%20veal%20until%20golden%20brown,%20about%204-5%20minutes%20on%20each%20side.%20Serve%20with%20lemon%20and%20parsley.%3C/p%3E%3Cp%3ELuckily%20enough,%20here%20in%20Seattle%20we%20are%20blessed%20with%20the%20amazing%20Bavarian%20Meats%20shop%20in%20Pike%20Place%20Market%20which%20carry%20a%20ton%20of%20amazing%20German%20and%20Austrian%20style%20meats.%20%20I%20chatted%20with%20the%20woman%20behind%20the%20counter%20a%20little%20bit%20and%20told%20her%20I%20was%20going%20to%20cook%20an%20Austrian%20meal.%20%20She%20said%20that%20I%20needed%20to%20get%20bockwurst%20and%20spicy%20bratwursts.%20%20I%20took%20her%20advice%20and%20added%20some%20Bavarian%20bacon%20to%20my%20bag%20of%20meat%20as%20well.%20%20As%20I%20was%20leaving,%20the%20nice%20lady%20offered%20me%20some%20free%20weiners%20and%20I%20snacked%20on%20my%20cold%20hotdogs%20all%20the%20way%20home.%20%20For%20the%20wurstkn%C3%B6edel%20I%20decided%20to%20use%20the%20spicy%20bratwurst%20for%20the%20filling.%20%20Wurstkn%C3%B6edel%20is%20a%20dumpling%20made%20of%20mashed%20potatoes%20and%20flour%20and%20stuffed%20with%20sausage.%20%20The%20sausage%20was%20sour,%20and%20cheesy,%20and%20spicy%20from%20the%20specks%20of%20jalapeno%20peppers.%20%20So%20stinking%20delicious.%20%20I%20made%20the%20dough%20and%20rolled%20out%20some%20into%20wonton%20sized%20rounds.%20%20Added%20a%20Tbsp%20of%20chopped%20up%20filling%20and%20sealed%20them%20up%20into%20little%20tennis%20ball%20sized%20dumplings.%20%20I%20think%20I%20worked%20the%20dough%20a%20little%20too%20much%20because%20the%20dumplings%20were%20a%20tiny%20bit%20gluey%20but%20they%20tasted%20phenomenal.%20%20I%20served%20them%20with%20a%20little%20roasted%20chicken%20gravy%20and%20sauerkraut.%3C/p%3E%3Cp%3EFor%20the%20tasty%20bockwurst%20I%20simply%20simmered%20them%20in%20sauerkraut%20and%20made%20some%20white%20beans%20with%20fresh%20dill%20and%20bacon.%20%20Bockwurst%20is%20traditional%20made%20from%20veal%20and%20pork%20and%20has%20a%20slightly%20sickly%20look%20to%20them.%20%20Sort%20of%20an%20off%20greyish%20white%20color.%20%20Perhaps%20like%20the%20bloated%20index%20finger%20of%20a%20tall,%20dead%20person.%20%20But%20don't%20let%20that%20get%20you%20down,%20they%20are%20so%20delicious,%20kind%20of%20like%20an%20fat,%20ugly%20hotdog%20on%20crack.%20%20Creamy%20and%20meaty.%20%20Super%20yummy.%20%20Sometimes%20they%20are%20even%20made%20with%20horse%20meat%20but%20not%20here%20in%20the%20states%20so%20you%20don'y%20have%20to%20worry%20if%20you're%20an%20equestrian.%20%20The%20beans%20were%20simply%20made%20by%20cooking%20chopped%20Bavarian%20bacon%20until%20crispy.%20%20I%20removed%20the%20bacon%20to%20paper%20towel,%20and%20sauteed%20some%20garlic,%20onion,%20celery,%20and%20carrots%20in%20the%20bacon%20fat%20until%20soft.%20%20I%20then%20added%20some%20drained,%20canned%20white%20beans%20and%20simmers%20for%20about%205%20minutes%20and%20finished%20with%20fresh%20dill,%20parsley,%20and%20a%20squeeze%20of%20lemon.%20%20Salt%20and%20pepper%20of%20course.%20%20It%20was%20a%20blindingly%20white%20arrangement%20of%20food%20but%20it%20was%20a%20great,%20simple%20meal%20and%20it%20was%20inexpensive%20to%20boot.%20%20I%20love%20Austrian%20food.%20%20Sour%20and%20meaty.%20%20Two%20of%20my%20favorite%20things.%3C/p%3E%3Cp%3EFor%20more%20info%20on%20this%20project,%20read%20this:%20203%20Sovereign%20States%3C/p%3E){kind=link}
