%20when%20he%20expressed%20interest%20in%20a%20dish%20my%20ears%20perk%20up%20and%20they%20did.%3C/p%3E%3Cp%3EMental%20note%20%22put%20patty%20melt%20on%20the%20menu%22.%3C/p%3E%3Cp%3EWhile%20checking%20out%20the%20pink%20meat%20in%20the%20sealed%20bags%20an%20idea%20immediately%20hit%20me%20and%20I%20picked%20up%20the%20smallest%20one%20I%20could%20find%20with%20the%20best%20marbling%20of%20fat%20I%20could%20see.%20I%20was%20going%20to%20grind%20down%20that%20brisket%20into%20ground%20meat%20for%20burgers.%3C/p%3E%3Cp%3ENot%20just%20any%20burger,%20ones%20shaped%20like%20a%20piece%20of%20sliced%20soda%20bread%20and%20make%20a%20Patty%20melt%20straight%20from%20that%20show.%20Now%20who's%20cooking%20with%20gas?%3C/p%3E%3Cp%3EYou%20do%20not%20need%20a%20meat%20grinder,%20you%20could%20easily%20ask%20your%20butcher%20to%20do%20one%20for%20you%20or%20use%20your%20food%20processor.%3C/p%3E%3Cp%3ERemove%20the%20meat%20from%20the%20corning%20liquid,%20wash%20the%20juice%20off,%20dry%20it%20well%20and%20cut%20away%20the%20layer%20of%20fat%20from%20the%20top%20of%20the%20meat.%20Mine%20was%20well%20cleaned%20and%20all%20I%20had%20to%20do%20was%20slice%20and%20cut%2014oz%20of%201/2%22%20cubes,%20place%20them%20into%20a%20freezer%20zip%20bag,%20fill%20the%20bag%20as%20it%20lays%20flat%20on%20a%20cutting%20board%20and%20place%20in%20the%20freezer%20for%2015%20minutes.%3C/p%3E%3Cp%3EIf%20your%20brisket%20does%20not%20have%20the%20nice%20marbling%20as%20mine%20did,%20use%20some%20of%20the%20top%20soft%20fat%20(nothing%20hard%20please).%3C/p%3E%3Cp%3EGrind%201/4%20at%20a%20time%20(about%203/4%20cup%20at%20a%20time,%20pulsing%2010x%20and%20then%20checking%20the%20meat.%20It%20should%20look%20exactly%20like%20the%20ground%20round%20you%20buy%20in%20the%20store%20only%20pinker).%3C/p%3E%3Cp%3EGit%20to%20the%20store%20and%20buy%20you%20some%20corned%20beef%20brisket%20for%20$1.99%20lb.%20and%20freeze%20them%20before%20they%20go%20back%20to%20$7.99%20lb.%20I%20am%20serious,%20DO%20IT%20NOW.%3C/p%3E%3Cp%3EI%20use%20beef%20briskets%20for%20burgers%20many%20times%20and%20they%20always%20come%20out%20juicy%20and%20tender.%20A%20brisket%20has%20marbling%20that%20when%20you%20grind%20it,%20it%20not%20only%20distributes%20the%20fat%20throughout%20the%20meat,%20it%20tenderizes%20it.%3C/p%3E%3Cp%3EWhy%20not%20use%20a%20corned%20beef%20brisket?%20It%20will%20have%20the%20corned%20taste%20we%20love%20this%20time%20of%20year%20but%20with%20the%20outside%20crust%20and%20juicy%20interior%20of%20a%20great%20burger.%20Make%20a%20patty,%20top%20with%20Guinness%20caramelized%20onions,%20a%20slab%20of%20really%20good%20authentic%20Kerry%20Gold%20Cheddar%20cheese%20and%20put%20it%20on%20your%20panini%20press%20and%20you%20have%20something%20spectacular.%3C/p%3E%3Cp%3EOMG%20I%20hit%20the%20jackpot%20with%20this.....you%20have%20got%20to%20taste%20it.%20At%20first%20you%20taste%20the%20salt%20but%20with%20the%20sweetness%20of%20the%20whole%20grain%20mustard%20and%20the%20sweet%20onions,%20the%20creaminess%20of%20the%20cheese,%20you%20just%20get%20taken%20to%20another%20level.%20Oh%20YES,%20this%20is%20a%20keeper!!%20I%20did%20something%20great........whoohoo!!!%3C/p%3E%3Cp%3EWe%20both%20decided%20we%20would%20love%20to%20grill%20them%20next%20time%20and%20make%20them%20thinner.%20The%20bread%20was%20all%20wrong,%20a%20good%20Ciabatta%20would%20have%20been%20a%20better%20choice%20but%20not%20Irish,%20so%20next%20time.%3C/p%3E%3Cp%3EI%20also%20think%20I%20would%20love%20to%20make%20meatballs%20with%20the%20ground%20corned%20beef%20and%20make%20a%20cabbage%20and%20potato%20soup%20to%20simmer%20them%20in.%3C/p%3E%3Cp%3EHappy%20St.%20Pat's%20Day%20to%20everyone%20who%20feels%20green.%3C/p%3E){kind=link}
