%20and%20I%20thought%20nothing%20would%20be%20better%20than%20my%20favorite%20Mardi%20Gras%20food.%20That%20would%20be%20a%20good%20ol',%20dripping%20messy,%20and%20I%20mean%20run-down-your-arm%20kind%20of%20messiness,%20French%20bread%20sandwich%20filled%20savory%20bits%20and%20shreds%20of%20beef%20and%20a%20full-flavored%20beefy%20gravy.%20If%20you%20have%20ever%20had%20a%20NOLA%20roast%20beef%20sandwich,%20then%20you%20know%20the%20kind%20we%20southerners%20prefer,%20or%20rather,%20demand.%20If%20you%20have%20not,%20then%20you%20should%20know%20that%20the%20NOLA%20type%20of%20roast%20beef%20is%20a%20misnomer%20as%20it%20is%20not%20roasted%20at%20all,%20rather%20boiled%20or%20braised%20in%20liquid,%20veggies%20and%20spices%20until%20it%20literally%20falls%20apart,%20thus%20becoming%20debris.%3C/p%3E%3Cp%3EI%20have%20several%20recipes%20for%20roast%20beef%20sandwiches%20and%20the%20one%20today%20is%20similar%20to%20one%20I%20shared%20during%20a%20contest%20back%20in%202011.%20Scroll%20down%20that%20post%20to%20find%20it.%20I%20used%20the%20slow%20cooker%20this%20time%20to%20cook%20the%20roast%20beef%20and%20used%20a%20whole%20sirloin%20tip%20roast%20(it%20was%20really%20a%20good%20buy).%20By%20cooking%20it%20in%20the%20slow%20cooker,%20I%20was%20able%20to%20do%20so%20slowly%20overnight%20and%20by%20lunchtime,%20it%20fell%20apart%20which%20was%20perfect%20and%20so%20well%20received.%3C/p%3E%3Cp%3ENow,%20I%20am%20not%20saying%20this%20po-boy,%20the%20recipe%20today,%20is%20the%20world's%20greatest%20sandwich,%20but%20it%20is%20a%20darn%20good%20one.%20To%20me,%20as%20mentioned,%20a%20roast%20beef%20sandwich%20is%20my%20very%20favorite.%20One%20taste%20of%20the%20sandwich%20today%20brings%20out%20flavorful%20depths%20of%20braised%20beef%20with%20savory%20onion%20and%20slight%20garlic%20undertones,%20a%20taste%20that%20from%20only%20one%20bite,%20will%20seem%20like%20your%20very%20first,%20and%20one%20being%20a%20taste%20of%20homecoming.%20Enjoy!%3C/p%3E%3Cp%3EUnlike%20the%20NOLA%20method,%20I%20like%20to%20sear%20my%20roast%20and%20this%20time%20I%20did%20it%20quickly%20in%20the%20oven.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20475%20degrees%20F.%3C/p%3E%3Cp%3ERemove%20roast%20from%20the%20packaging,%20rinse%20if%20desired%20and%20dry%20completely.%20Remove%20the%20silver%20skin%20left%20on%20and%20any%20visible%20fat.%20Normally%20there%20is%20a%20vein%20of%20silver%20and%20fat%20running%20through%20the%20center.%20Season%20the%20roast%20all%20over%20with%20salt,%20pepper%20and%20garlic%20powder.%20Dust%20lightly%20with%20flour%20completely.%20Place%20in%20a%20roasting%20pan%20and%20roast%20in%20the%20oven%20for%20about%2015%20minutes%20turning%20the%20roast%20over%20midway%20or%20until%20the%20meat%20is%20seared%20all%20over.%20Remove%20from%20oven.%3C/p%3E%3Cp%3EIn%20a%20large%20slow%20cooker,%20place%20half%20of%20the%20bell%20pepper%20an%20garlic%20in%20the%20bottom%20and%20lay%20the%20roast%20on%20top.%20Sprinkle%20the%20remaining%20bell%20pepper%20and%20garlic.%20Cover%20roast%20with%20the%20onion%20slices%20and%20with%20the%20steak%20seasoning.%20Pour%20the%20beef%20broth%20over%20the%20onions.%3C/p%3E%3Cp%3ECover%20and%20cook%20on%20low%20for%2010%20to%2012%20hours.%3C/p%3E%3Cp%3ERemove%20cover%20and%20if%20needed,%20shred%20roast%20with%20two%20serving%20forks%20or%20chop%20on%20a%20large%20cutting%20board.%20I%20stirred%20the%20roast%20around%20enough%20to%20dislodge%20most%20into%20bite%20size%20pieces%20and%20then%20continued%20cooking%20on%20low%20another%204%20hours.%20At%20this%20point,%20the%20meat%20fell%20apart%20and%20was%20ready%20to%20serve.%3C/p%3E%3Cp%3EServe%20on%20French%20style%20pistolettes,%20cut%20French%20bread,%20Po-Boy%20loaves%20or%20even%20submarine%20type%20loaves.%20In%20true%20sense,%20the%20sandwiches%20would%20be%20served%20%22fully%20dressed%22%20with%20mayo,%20lettuce%20and%20slices%20of%20tomato.%20Horseradish,%20red%20onions,%20bread-and-butter%20pickles%20and%20Creole%20mustard%20are%20optional;%20some%20folks%20even%20like%20a%20dab%20of%20BBQ%20sauce%20(a%20sacrilege%20act%20if%20you%20ask%20me).%3C/p%3E){kind=link}
