- 3 lrg Potatoes
- Â Â x Reserved potato cooking
- Â Â Water
- 3 x 4 tsp. fresh garlic,
- Â Â Mashed & minced
- 1/2 c. Lemon juice
- 2 c. Fat-free mayo

- Peel and boil potatoes. Drain (save some of the cooking water), cold, mash with garlic. Fold in lemon juice, then mayo. Mix till well incorporated.
- Add in potato-cooking water as need to thin slightly. Refrigeratebefore using.
- Makes just under 3 c..
