- Â Â Vegetable cooking spray
- 4 x garlic cloves chopped
- 2 x green bell peppers cut into strips
- 1 c. sliced green onions
- 3 can Chi-Chi's diced green chilies - (4 ounce ea)
- 2 x jalapeno peppers chopped
- 2 tsp dry whole oregano
- 2 tsp grnd cumin
- 2 can canellini beans or possibly kidney beans - (15 ounce ea)
- 2 can condensed chicken broth - (10 3/4 ounce ea) undiluted
- 1 can Spam luncheon meat - (12 ounce) cubed

- In large saucepan coated with cooking spray, saute/fry garlic over medium heat 1 minute. Add in green pepper, green onion, chilies, jalapenos, oregano, and cumin; saute/fry 5 min. Stir in beans and broth. Bring to a boil. Cover. Reduce heat and simmer 10 min. Stir in Spam. Simmer 2 min.
- This recipe yields 4 to 6 servings.
