- 2 Tbsp. extra virgin olive oil

- 1 x shallot, chopped

- Pull apart maitake mushrooms into small florets and set aside.
- Heat the oil. Saute/fry the mushrooms in the oil for 15 seconds and add in salt and pepper to taste.
