%3C/p%3E%3Cp%3EWhen%20we%20got%20home%20we%20were%20starving%20and%20so%20I%20threw%20together%20a%20quick%20Chicken%20Biryani.%20(Nothing%20special,%20just%20using%20a%20jarred%20sauce%20I%20got%20at%20the%20store,%20a%20couple%20of%20diced%20chicken%20breasts%20and%20some%20basamati%20rice.%20Quick%20and%20easy.)%3C/p%3E%3Cp%3EWhile%20the%20chicken%20was%20in%20the%20oven%20I%20threw%20together%20a%20delicious%20dessert%20for%20us%20that%20turned%20out%20fabulous.%20AND%20.%20.%20.%20there's%20no%20fat%20in%20the%20apples%20at%20all%20.%20.%20.%20truly!%3C/p%3E%3Cp%3EIt's%20just%20apples,%20sugar%20and%20water%20.%20.%20.%20oh%20and%20a%20few%20spices%20like%20cinnamon%20and%20nutmeg.%3C/p%3E%3Cp%3EVery%20healthy,%20very%20quick%20and%20oh%20sooooooo%20scrummy!!%3C/p%3E%3Cp%3EOf%20course%20the%20Vanilla%20Mascarpone%20had%20lots%20of%20fat%20in%20it%20.%20.%20.%20but%20if%20you're%20feeling%20indulgent%20what%20the%20hey!!%20Quite,%20quite%20rich%20and%20delicious!%3C/p%3E%3Cp%3EI%20had%20some%20non%20fat%20Greek%20yogurt%20with%20mine%20and%20it%20was%20quite%20yummy%20as%20well!%20Just%20look%20at%20those%20golden%20apples%20and%20that%20deliciously%20rich%20topping.%20Go%20on%20.%20.%20.%20just%20try%20to%20resist!%20I%20love%20it%20when%20something%20that%20is%20sooooo%20moreishly%20wanton%20.%20.%20.%20is%20actually%20not%20all%20that%20bad%20.%20.%20.%20don't%20you??%3C/p%3E%3Cp%3E*Toffee%20Apples%20with%20Vanilla%20Mascarpone*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3ESimple,%20delicious%20and%20quite%20low%20in%20fat%20.%20.%20.%20ok%20well,%20the%20mascarpone%20is%20not%20low%20in%20fat,%20but%20you%20could%20substitute%20some%20fat%20free%20yoghurt%20instead%20if%20you%20wanted%20to.%3C/p%3E%3Cp%3EPlace%20the%20apple%20pieces%20into%20a%20bowl%20along%20with%20the%20sugar,%20cinnamon,%20nutmeg%20and%20water.%20Give%20them%20a%20good%20toss%20together.%3C/p%3E%3Cp%3EHeat%20a%20large%20heavy%20bottomed%20skillet%20over%20medium%20high%20heat.%20Add%20the%20apples%20mixture,%20spreading%20it%20out%20into%20one%20layer%20as%20much%20as%20you%20can.%20Let%20them%20start%20to%20caramelize%20and%20turn%20golden%20on%20one%20side,%20before%20you%20flip%20them%20over%20and%20do%20the%20same%20on%20the%20other%20side,%20removing%20them%20as%20they%20become%20caramelized%20on%20both%20sides.%3C/p%3E%3Cp%3ESplit%20the%20vanilla%20pod%20in%20half%20lengthwise.%20Put%20the%20mascarpone%20into%20a%20bowl.%20Using%20the%20tip%20of%20a%20knife,%20scoop%20up%20all%20the%20black%20seeds%20from%20the%20vanilla%20pod%20and%20drop%20them%20into%20the%20mascarpone.%20Mix%20them%20in%20well.%20(Use%20the%20split%20vanilla%20pod%20in%20your%20sugar%20jar%20to%20infuse%20your%20sugar%20with%20the%20scent%20and%20flavour.%20Just%20plunge%20it%20in%20and%20let%20it%20sit%20forever.%20Well,%20it%20will%20last%20for%20a%20very%20long%20time%20at%20any%20rate.)%3C/p%3E%3Cp%3ESpoon%20the%20hot%20apples%20into%20individual%20bowls.%20Top%20each%20with%20a%20dollop%20of%20the%20Vanilla%20mascarpone%20and%20serve%20immediately.%3C/p%3E){kind=link}
