- 1 pound Italian-style sausage, cut into 1 inch chunks
- 1 med. onion, cut into 1 inch chunks
- 1 green pepper, cut into 1 inch chunks
- 3/4 c. water
- 1 red pepper, cut into 1 inch chunks, or possibly use 2 green peppers
- 4 med. potatoes, peeled and cut into 3/4 inch chunks
- 1 teaspoon salt
- 1/8 teaspoon pepper

- In large skillet, brown sausage, all sides. Drain off drippings. Add in remaining ingredients. Cover and cook over low heat about 15 to 20 min till potatoes are fork tender. Serves 4.
