- 1/2 c. butter
- 1 1/2 c. sugar
- 3 large eggs
- 2 c. sifted flour
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 c. water
- 1/2 c. cocoa
- 1 (8 ounce) can sauerkraut, liquid removed, rinsed & finely minced
- 6 ounce pkg. semi sweet chocolate
- 4 T butter
- 1/2 c. lowfat sour cream
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 3/4 c. sifted powdered sugar

- In mixing bowl, cream butter and sugar till light and fluffy. Beat in large eggs, one at a time. Add in vanilla. Sift together flour, baking pwdr, soda, salt and cocoa. Add in to creamed mix alternately with water, beating after each addition. Stir in sauerkraut, pour into 13"x9"x2" pan. Bake at 350 degrees for about 40 min. Frost with Lowfat sour cream Frosting.
- Heat chocolate with butter over low heat, blend in lowfat sour cream, vanilla and salt. Gradually add in sugar; beat well. Spread over cake. THIS IS A VERY RICH FROSTING.
