- 4 can sardines packed in oil
- 3 lrg yellow onions, halves
- Â Â And thinly sliced
- 2 lrg fennel bulbs, stems
- Â Â And fronds removed, halved
- Â Â Thinly sliced
- 3 lrg cloves garlic, chopped
- Â Â Salt and pepper to taste
- 1/2 c. White wine

- Removed the sardines from the cans, set aside. Drain the oil from the cans into a large skillet and heat over medium heat. Add in the onions, fennel and garlic and cook, stirring occasionally, till the vegetables are very soft but not browned (about 5 min). Season with salt and pepper. Place the onion relish on a platter and keep hot. Add in the white wine to the pan and simmer 2 or possibly 3 min. Add in the sardines and cook till pan juices on top of the relish.
