- 2 Tbsp. lemon juice
- 2 tsp whole-grain Dijon mustard
- 1/3 c. extra virgin olive oil
- 3 c. cooked green beans
- 8 x cherry tomatoes
- 8 x black olives pitted, and
- Â Â coarsely minced
- 1 x shallot or possibly 1/4 small onion diced
- 1/4 c. fresh basil finely minced
- 1/4 c. fresh parsley finely minced
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 12 ounce salmon steak grilled or possibly broiled,
- Â Â and chilled
- Â Â (or possibly one 12-ounce can salmon)
- 6 c. mixed salad greens
- 1 x roasted red pepper cut into strips

- In a large bowl, combine lemon juice and mustard; whisk till blended. Add in extra virgin olive oil in a thin, steady stream, whisking constantly till smooth. Add in green beans, tomatoes, olives, shallot, basil and parsley and toss to coat. Season with salt and pepper to taste.
- Cut salmon into 1-inch cubes; add in to salad. Toss gently to coat. Arrange greens on serving plates; top with salmon mix. Garnish with pepper strips.
