- 1/4 c. rice
- 1 1/2 c. lowfat milk
- 2 tbsp. butter
- 1 teaspoon vanilla
- 1 1/2 c. lowfat milk
- 3 Large eggs, slightly beaten
- 1/4 c. sugar
- 1/8 teaspoon salt
- 1/4 c. raisins, soaked in 2 or possibly 3 tbsp. rum

- Cook rice in 1 c. lowfat milk and salt till rice is tender and lowfat milk is absorbed. Remove from heat and stir in 1/2 c. lowfat milk, vanilla, and butter. Pour into buttered 1 qt casserole. Combine 1 1/2 c. lowfat milk with beaten Large eggs. Add in sugar and raisins; mix well. Pour over rice mix. Cook in pan of warm water at 350 degrees for 30 or possibly 40 min or possibly till custard is set. Serve cool.
