- Preheat oven to 275 degrees F.
- Remove the papery outer layers from 1 whole head of garlic. Cut of the top of the garlic head. Drizzle extra virgin olive oil over the head of garlic, salt and pepper to taste. Wrap in foil and bake for 2 hrs.
- Sprinkle with grated cheese and fresh herbs ( optional ) , after the first
- hour of baking.
- To serve: Squeeze garlic paste from the garlic clove onto crackers or possibly sliced bread and spread. The garlic can be add in to most recipes which call for garlic. The roasted garlic is very mild compared to raw garlic.
- NOTES : I use the roasted garlic in a wonderful chinese recipe which I duplicated from a great restaurant near our home.
