  1. Cook the giblets till tender, chop and add in to stuffing made by mixing bread crumbs, onion, fat, sage, salt and pepper. After cleaning and washing the goose thoroughly, stuff, and sew the neck and back. Roast very slowly
  2. (350-400 degrees F.), about three hrs. Wash and core six to eight apples; sprinkle with sugar, stuff with mashed and seasoned sweet potato. Bake till tender and serve warm with the goose.
