- Inspired by Joshua Wessonâs Caramelized-Onion Risotto with Bacon
- 4 T. extra-virgin olive oil, divided
- 1 1/2 onion, halved lengthwise and thinly sliced crosswise (about 2 cups)
- 1/4 c. white wine
- 2 quarts vegetable or chicken stock
- 2 garlic cloves, minced
- 2 c. arborio rice
- 2 t. coarsely chopped fresh rosemary
- 1/2 c. freshly grated Parmesan cheese, plus more for serving
- Salt and freshly ground pepper

%3C/p%3E%3Cp%3EWhether%20you%20call%20it%20the%20cupboard,%20the%20pantry,%20or%20the%20larder,%20I%20am%20on%20a%20binge.%20%20%20Again,%20I%20have%20too%20much%20stuff.%3C/p%3E%3Cp%3EOh,%20Eden%20Organic%20beans%20are%20on%20sale?%20%20%20Load%20me%20up.%3C/p%3E%3Cp%3EItalian%20Risotto%20for%20sale%20at%20T.J.%20Maxx?%20%20%20I%20am%20buying%20four%20boxes.%3C/p%3E%3Cp%3EWhat%20about%20all%20the%20tomatoes,%20salsa,%20and%20jam%20I%20canned%20this%20summer?%20%20%20Have%20I%20done%20anything%20with%20all%20this%20bounty?%3C/p%3E%3Cp%3EThat%20would%20be%20a%20%E2%80%9CNo.%E2%80%9D%3C/p%3E%3Cp%3EAnd%20for%20heaven%E2%80%99s%20sake,%20keep%20me%20away%20from%20the%20%E2%80%9Cfill-your-own-bag-bulk-aisle%E2%80%9D%20at%20Whole%20Foods.%3C/p%3E%3Cp%3EMy%20pantry%20is%20atrocious.%3C/p%3E%3Cp%3EThere%20is%20actually%20a%20box%20of%20industrial-size%20plastic%20wrap%20in%20this%20pantry%20that%20we%20bought%20when%20we%20moved%20in%20THIRTEEN%20YEARS%20AGO!%3C/p%3E%3Cp%3ESo,%20I%20did%20not%20go%20to%20the%20grocery%20store%20all%20last%20weekend%20and%20we%20did%20not%20starve%20to%20death.%20%20%20Until%20we%20get%20the%20pantry%20and%20freezer%20cleaned%20out,%20I%20am%20only%20buying%20staples%20at%20the%20grocery%20store.%20%20%20(And,%20I%20hit%20a%20sale%20on%20sugar%20pre-Christmas,%20so%20I%20still%20have%20four%20bags%20in%20the%20pantry.%20%20%20That%20should%20do.)%3C/p%3E%3Cp%3EWhat%20can%20we%20buy?%3C/p%3E%3Cp%3EMilk%20(What%20is%20the%20deal?%20%20%20There%20were%20only%20two%20bottles%20of%20organic%20milk%20in%20the%20case%20the%20last%20time%20I%20shopped%20and%20they%20were%20near%20expired.)%3C/p%3E%3Cp%3EEggs%20(We%20can%20still%20get%20these%20at%20our%20Winter%20Market%20which%20is%20every%20other%20week.)%3C/p%3E%3Cp%3EJuice%20(It%20sounds%20like%20all%20we%20do%20is%20breakfasts,%20doesn%E2%80%99t%20it?)%3C/p%3E%3Cp%3EA%20few%20fresh%20fruits%20and%20veggies%20when%20needed.%3C/p%3E%3Cp%3ESeriously,%20I%20think%20that%20is%20it.%20%20%20(Besides%20the%20pantry,%20we%20are%20cleaning%20out%20the%20chest%20freezer%20and%20side-by-side%20freezer.%20%20There%20may%20be%20a%20lot%20of%20dishes%20and%20recipes%20in%20the%20future%20%20that%20will%20be%20un-blog-worthy.)%3C/p%3E%3Cp%3ESo%20using%20up%20a%20bag%20of%20onions,%20the%20previously%20mentioned%20T.J.%20Maxx%20arborio%20rice,%20and%20some%20veggie%20stock,%20I%20made%20dinner%20tonight.%20%20Maybe%20this%20Clean%20Out%20won%E2%80%99t%20be%20too%20bad%20after%20all.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%203%20T.%20of%20the%20olive%20oil.%20%20Add%20the%20onions%20and%20cook%20over%20moderately%20high%20heat%20until%20lightly%20browned,%20about%205%20%20minutes.%20%20Reduce%20the%20heat%20to%20low%20and%20cook,%20stirring%20occasionally,%20until%20the%20onions%20are%20very%20soft%20and%20browned,%20about%2020%20minutes.%20%20%20Add%20white%20wine%20and%20stir%20to%20deglaze%20pan.%20%20Set%20aside.%3C/p%3E%3Cp%3EBring%20the%20stock%20to%20a%20boil%20in%20a%20medium%20saucepan.%20%20(I%20used%20vegetable%20stock%20because%20that%20is%20what%20was%20in%20the%20pantry.)%20%20%20Cover%20and%20keep%20hot%20over%20low%20heat.%20%20%20Heat%20the%20remaining%201%20T.%20of%20olive%20oil%20in%20the%20large%20saucepan.%20%20%20Add%20the%20garlic%20and%20cook%20over%20moderate%20heat%20until%20fragrant,%20about%201%20minute.%20%20%20Add%20the%20rice%20and%20cook,%20stirring,%20for%202%20minutes.%20%20%20Add%20enough%20hot%20stock%20to%20cover%20the%20rice,%20about%201%201/2%20cups,%20and%20stir%20constantly%20over%20moderate%20heat%20until%20the%20stock%20has%20been%20absorbed.%20%20%20Continue%20adding%20stock,%20about%201%201/2%20cups%20at%20a%20time,%20and%20cook,%20stirring,%20until%20it%20has%20been%20completely%20absorbed%20before%20adding%20more.%20%20%20The%20rice%20is%20done%20when%20the%20grains%20are%20just%20tender%20and%20the%20sauce%20is%20creamy,%20about%2020%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20the%20heat%20and%20stir%20in%20the%20onions,%20rosemary%20and%201/2%20cup%20of%20Parmesan.%20%20%20Season%20with%20salt%20and%20pepper.%20%20%20May%20add%20additional%20Parmesan%20before%20serving%20to%20garnish.%3C/p%3E%3Cp%3ERisotto%20with%20lots%20of%20rosemary.%3C/p%3E%3Cp%3EAlthough%20this%20risotto%20was%20quite%20creamy%20as%20we%20were%20eating%20it,%20I%20snapped%20this%20pic%20after%20dinner%20when%20it%20had%20cooled%20off.%20%20It%20looks%20lots%20less%20creamy%20in%20this%20photo.%3C/p%3E%3Cp%3EI%20had%20just%20snipped%20some%20rosemary%20to%20send%20to%20my%20sister%20in%20the%20NORTH%20country%20where%20it%20is%2010%20degrees%20or%20something%20like%20that.%20%20%20I%20thought%20it%20would%20make%20a%20good%20photo%20op%20for%20the%20risotto.%3C/p%3E%3Cp%3EWe%20have%20lots%20of%20this%20leftover%20so%20I%20am%20going%20to%20dig%20in%20the%20bottom%20of%20the%20freezer%20for%20some%20chicken%20to%20grill%20to%20go%20on%20top%20for%20other%20suppers%20this%20week.%20%20%20Tonight%20we%20had%20it%20with%20a%20green%20salad%20(thanks%20to%20the%20hoop%20house)%20with%20tomatoes%20(thanks%20to%20the%20green%20house).%3C/p%3E%3Cp%3EFresh%20salad%20in%20winter.%3C/p%3E%3Cp%3ENote:%20%20%20I%20am%20still%20looking%20for%20some%20frozen%20chicken%20but%20I%20did%20find%20some%20grilled%20pork%20loin%20in%20the%20side-by-side.%20%20%20This%20was%20delicious%20with%20the%20rosemary%20and%20onion%20flavors%20of%20the%20risotto.%20%20%20(Maybe%20I%20will%20find%20the%20chicken%20for%20tomorrow%20night%E2%80%99s%20meal.)%3C/p%3E%3Cp%3EKeep%20up%20with%20our%20Clean%20Out:%3C/p%3E){kind=link}
