%20starts%20January%206?%20%20This%20is%20Twelfth%20Night,%2012%20days%20after%20Christmas.%20%20It's%20also%20the%20day%20bakeries%20have%20King%20Cakes%20ready.%20%20(Although,%20like%20everything%20else--from%20Easter%20baskets%20to%20Christmas%20decorations--King%20Cakes%20are%20now%20available%20well%20before%20Carnival%20season%20starts.)%3C/p%3E%3Cp%3EHere%20in%20Cajun%20country,%20Mardi%20Gras%20is%20just%20that...Mardi%20Gras,%20or%20Fat%20Tuesday.%20%20There%20may%20be%20a%20few%20street%20dances%20on%20Lundi%20Gras%20(Shrove%20Monday).%20%20And%20my%20town%20holds%20a%20boucherie%20on%20the%20Sunday%20before%20Mardi%20Gras.%20%20But%20this%20is%20definitely%20not%20a%20season*%20of%20parades%20and%20parties%20like%20in%20New%20Orleans.%20%20*While%20kick-off%20is%20a%20set%20date%20of%20Jan%206,%20the%20length%20varies%20from%20year%20to%20year.%3C/p%3E%3Cp%3ESometimes%20I%20miss%20the%20non-stop%20action.%20%20Sometimes,%20when%20I%20choose%20to%20acknowledge%20reality,%20I%20know%20it%20would%20just%20exhaust%20me.%3C/p%3E%3Cp%3ESo%20I'm%20aiming%20for%20a%20happy%20medium.%20%20Yes,%20January%206th%20is%20the%20official%20start.%20%20But%20I%20don't%20start%20making%20plans%20until%20we're%20about%20a%20month%20away.%3C/p%3E%3Cp%3EFrom%20now%20until%20March%208,%20Mardi%20Gras%202011%20(that's%20on%20a%20Tuesday,%20yall!),%20I'll%20be%20making%20dishes%20to%20celebrate%20the%20season.%20%20My%20mom's%20crab%20dip,%20classic%20New%20Orleans%20milk%20punch,%20my%20annual%20homemade%20king%20cake%20(w/%20blueberry%20filling%20this%20year--assuming%20it%20works%20out),%20and%20beignets.%3C/p%3E%3Cp%3EIn%20New%20Orleans,%20everybody%20knows%20somebody%20who%20lives%20along%20a%20parade%20route.%20%20Friends%20and%20family%20gather%20early%20(%22buhfore%20da%20parade%20traffic,%20dawlin'%22),%20share%20food%20&%20fun,%20watch%20the%20parade%20together,%20linger%20a%20while%20after%20(%22tuh%20wait%20out%20da%20traffic%22).%20%20A%20parade%20is%20an%20all%20day/night%20event!%3C/p%3E%3Cp%3EToday,%20it's%20a%20dish%20that's%20good%20for%20feeding%20such%20crowds:%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Red%20Bean%20Gumbo%3C/p%3E%3Cp%3Ethe%20usual%20suspects:%20onion,%20bell%20pepper,%20celery,%20garlic%3C/p%3E%3Cp%3Esmoked%20sausage,%20pickle%20meat,%3C/p%3E%3Cp%3Evegetable%20oil%20&%20flour%20for%20the%20roux%3C/p%3E%3Cp%3Echicken%20stock,%20kidney%20beans,%3C/p%3E%3Cp%3Esalt,%20black%20pepper,%20red%20pepper,%20Tony's,%20bay%20leaves,%3C/p%3E%3Cp%3Eparsley,%20green%20onion,%20cooked%20rice%3C/p%3E%3Cp%3EStandard%20gumbo%20procedure:%3C/p%3E%3Cp%3Emake%20sure%20everything%20is%20chopped%20before%20starting%20your%20roux%3C/p%3E%3Cp%3Eand%20don't%20use%20a%20non-stick%20pot!%3C/p%3E%3Cp%3EGo%20here%20for%20step-by%20step%20roux%20making.%3C/p%3E%3Cp%3EOne%20thing%20I've%20never%20addressed%20about%20making%20a%20roux%20is%20this...%3C/p%3E%3Cp%3Epart%20way%20through%20making%20a%20dark%20roux,%3C/p%3E%3Cp%3Eit%20may%20get%20clumpy%20and%20grainy%20(bottom%20left).%3C/p%3E%3Cp%3EJust%20keep%20on%20truckin',%20stirring%20away,%20and%20it%20will%20smooth%20out%20in%20no%20time%3C/p%3E%3Cp%3E(bottom%20right)%3C/p%3E%3Cp%3EI'll%20say%20it%20again%20because%20it's%20important:%20have%20everything%20chopped%20and%20ready.%3C/p%3E%3Cp%3ERoux%20waits%20for%20no%20man%20(or%20woman)!%3C/p%3E%3Cp%3EThe%20best%20way%20to%20burn%20it%20is%20to%20be%20caught%20with%20your%20pants%20down.%3C/p%3E%3Cp%3EYep...that%20would%20most%20definitely%20burn.%3C/p%3E%3Cp%3EAfter%20cooking%20the%20veg%20down%20in%20your%20roux,%20add%20the%20meats.%3C/p%3E%3Cp%3EI%20used%20hot%20smoked%20sausage%20and%20leftover%20pickle%20meat%20from%20the%20freezer%20(from%20the%20white%20beans%20I%20recently%20made).%3C/p%3E%3Cp%3EIf%20pickle%20meat%20is%20unavailable,%20use%20salt%20pork,%20ham%20hocks,%20smoked%20turkey%20legs,%20or%20pork%20neck%20bones%20for%20seasoning.%20%20Or%20just%20throw%20in%20some%20extra%20sausage.%3C/p%3E%3Cp%3EThe%20beans...%3C/p%3E%3Cp%3EI%20decided%20to%20puree%20half%20and%20leave%20the%20other%20half%20whole.%3C/p%3E%3Cp%3EIt's%20a%20texture%20thing.%20%20I%20like%20texture.%3C/p%3E%3Cp%3EThe%20pureed%20beans%20added%20a%20nice%20creamy,%20velvety%20feel,%3C/p%3E%3Cp%3Ewhile%20the%20whole%20beans%20added%20a%20different%20dimension.%3C/p%3E%3Cp%3EI%20had%20a%20little%20trouble%20getting%20the%20pureed%20beans%20to%20blend%20in.%20%20I'd%20suggest%20whisking%20them%20into%20the%20chicken%20stock,%20then%20adding%20everything,%20including%20your%20spices%20to%20the%20pot.%20%20Simmer%20about%202%20hours%20to%20all%20day.%3C/p%3E%3Cp%3EAbout%20the%20rice%20to%20gumbo%20ratio...%3C/p%3E%3Cp%3EGumbo%20is%20not%20gravy!%3C/p%3E%3Cp%3EThere%20should%20be%20much%20more%20liquid%20than%20rice%20in%20your%20bowl.%3C/p%3E%3Cp%3EAdd%20a%20small%20mound%20of%20rice,%20ladle%20the%20gumbo%20over,%20and%20enjoy!%3C/p%3E%3Cp%3ELinked%20up%20with%3C/p%3E%3Cp%3EFeb%208%3C/p%3E%3Cp%3EAnd%20linking%20with%20Tailgating%20Game%20Week%20@%20Drick's%20Rambling%20Cafe%3C/p%3E%3Cp%3ERed%20Bean%20Gumbo%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace%3C/p%3E%3Cp%3EChop%20all%20vegetables%20before%20starting%20the%20roux.%3C/p%3E%3Cp%3EIn%20a%20large%20cast%20iron%20or%20stainless%20steel%20pot%20(don't%20use%20non-stick),%20heat%20vegetable%20oil.%20%20When%20oil%20is%20hot,%20sprinkle%20in%20the%20flour.%20%20Stir%20constantly%20but%20carefully.%20%20Roux%20can%20easily%20burn%20and%20burn%20your%20skin.%20%20Continue%20cooking%20and%20stirring%20until%20the%20roux%20is%20a%20coppery%20brown%20color.%20%20If%20pools%20of%20oil%20form,%20sprinkle%20in%20more%20flour%20and%20incorporate.%3C/p%3E%3Cp%3EWhen%20your%20roux%20is%20the%20color%20you'd%20like%20(darker%20=%20more%20flavor%20but%20less%20thickening%20power),%20quickly%20add%20the%20chopped%20vegetables.%20%20Saut%C3%A9%20until%20tender,%20adding%20a%20small%20amount%20of%20water%20or%20stock%20if%20needed.%20%20Add%20the%20sausage%20and%20pickle%20meat%20and%20saut%C3%A9%20for%205-8%20minutes.%3C/p%3E%3Cp%3EStir%20or%20whisk%20the%20pureed%20beans%20into%20the%20stock%20to%20help%20blend%20the%20mixture.%20%20Pour%20into%20the%20pot%20along%20with%20seasonings%20and%20the%20whole%20red%20beans.%20%20Simmer%20for%20about%202%20hours%20to%20all%20day.%3C/p%3E%3Cp%3EJust%20before%20serving,%20add%20the%20parsley%20and%20green%20onion.%20%20Serve%20over%20rice.%20%20Pass%20hot%20sauce%20at%20the%20table.%3C/p%3E){kind=link}
