- 1/2 tsp Whole cloves
- 1 tsp Grnd ginger
- 1 tsp Peppercorns
- 1 x -inch piece of galangal (opt.)
- Â Â Piece of long pepper (opt.)
- 1 tsp Cubebs (opt.)
- 1 tsp Grains of paradise (opt.)

- 1. Place allspice, cardamom seeds, cinnamon, and coriander and cumin seeds together in a saute/fry pan over medium heat nd dry-roast, shaking pan often, till they give off an aroma, about 5 min.
- 2. Combine all ingredients in a mortar or possibly a clean coffee grinder and grind to a pwdr. Store in an airtight container.
