- Wipe quinces well Core, but don't peel.
- Peel and put through the mincer the pineapple, also the quinces.
- Have a basin underneath to catch the juice.
- Meanwhile put on to boil the pint of water and the sugar.
- Boil hard for 10 min, then put in the chopped fruit and continue boiling for 30 - 45 min, when it should be right thickness and a lovely golden brown colour.
