- 2 ounce Paper-thin slices - prosciutto
- 8 ounce Part-skim ricotta cheese
- 2 tsp Grated lemon peel
- 2 med -size (2/3 pound total) Nectarines or possibly peeled -peaches, pitted and

- 3/4 c. Dark seedless grape halves
- 2 Tbsp. Sugar
- 1/4 tsp Grnd cinnamon

- Unroll dough and press proportionately into an oiled 14 inch pizza pan (or possibly 10-by 15 inch pan). Bake on bottom rack in a 425F oven till crust is well browned, about 8 min. Cut sufficient prosciutto into 1/4 inch strips to make 1/4 c.; set remainder aside. Mix ricotta and peel; drop in 1 Tbsp. portions over crust.
- Arrange nectarines, grapes, and prosciutto strips on crust. Combine sugar and cinnamon; sprinkle over pizza. Bake till fruit is warm to touch, about 5 min longer. Accompany with remaining prosciutto.
