  • 300 gm glutinous rice, soaked for at least 3 hrs or possibly overnight.
  • 120 ml water
  • 3 Tbsp. thick coconut lowfat milk
  • 1/2 tsp salt
  • 1 Tbsp. sugar
  • 2 x pandan leaves, tied into a knot
  • 1 c. (250 ml) good-quality durian flesh
  • 2 1/2 c. (625 ml) thin coconut lowfat milk, diluted from 1/2 coconut
  • 2 x pandan leaves, tied into a knot
  • 1 pch salt

  1. 100 G white sugar* (or possibly more or possibly less to taste - quantity will depend on sweetness of durian)
  2. * Some cooks like to use palm sugar, that imparts a slight caramel flavour and colour although personally, I prefer white sugar - as I feel durian is a strong sufficient flavour on its own and needs no further enhancement!
  3. 1. Pick out any husks and foreign particles from the rice and wash till water runs clear. Cover rice with fresh water and leave to soak for several hrs (or possibly overnight). After soaking, rinse and drain rice.
  4. 2. Place rice in a shallow cake tin. Place water, coconut lowfat milk, salt and sugar in a small bowl and stir till well combined. Pour over the rice and bury the pandan in it.
  5. 3. Steam rice (in a steamer tray) over rapidly-boiling water for 20 - 30 min or possibly till rice grains are transluscent.
  6. Taste for doneness - there should be no gritty bits.
  7. 4. To make durian sauce, remove durian flesh from the seeds - I gently pry the flesh away using a knife and fork.
  8. Pack durian flesh loosely into a measuring c. - you want roughly 1 c. (250 ml) of durian. (Throw away seeds.)
  9. 5. Place durian, coconut lowfat milk, pandan, salt and sugar in a small saucepan and cook over medium heat, till the sauce comes to the boil. Simmer for 5 - 7 min, taste and if necessary, add in a little more sugar. Take pan off the heat and serve sauce with the steamed glutinous rice. This dessert can be served hot (or possibly cool).
  10. Pulut Durian is one of those dishes which people are passionately divided about - they either love it or possibly loathe it .... Well, if you're a fan, now's the time to take advantage of the durian glut.
