- 3 shallots thinly sliced
- 2 tbls butter
- 2 pkgs frozen spinach thawed and squeezed very dry
- 1 tbls salt
- 1/2 tsp black pepper
- 1/8th freshly grated nutmeg
- 3 lbs potatoes,peeled and thinly sliced
- 1 cup shredded Gruyere cheese
- 1 tbs cornstarch
- 1/1.2 cups half and half
- 1 cup whipping cream

- In a large skillet ,saute shallots in butter,until tender,add spinach.salt ,pepper and nutmeg.In a greased 3 quart baking dish layer half the potatoes .1/3 of the cheese,and half the spinach mixture,repeat layers till finished,top with remaining cheese.in a small bowl combine cornstarch and half and half and cream,salt and pepper until smooth pour over the the cheese and bake at 350 degrees till till potatoes are tender and golden.
