- 1Â 1/2 lb Potatoes cooked and peeled
- 2 x Egg yolks
- 1 tsp Salt
- 1/8 tsp Pepper
- 1 Tbsp. Potato starch
- 2 x Egg whites stiffly beaten
- Â Â Butter or possibly fat for frying

- Mash the potatoes and beat in the egg yolks, salt, pepper and potato starch. Mix in the egg whites.
- Heat the butter or possibly fat in a skillet and drop the potato mix into it by the Tbsp.. Fry till browned on both sides. Serve with lowfat sour cream or possibly applesauce.
- Serves 6.
