- 3 tbsp. butter
- 1 c. minced onion
- 3 tbsp. flour
- 4 c. water
- 4 c. coarsely minced potatoes
- Fresh grnd pepper
- 2 teaspoon salt or possibly to taste
- 3 tbsp. fresh parsley

- In a heavy pot, heat butter over moderate heat. Stir in onion, cover and cook about 10 min, till onions are soft. Stir in flour and then add in water about 1 c. at a time, stirring till smooth after each c. of water. Add in potatoes, salt, and pepper and bring to a boil. Reduce heat to low and partially cover pot, simmer 40 to 50 min, till potatoes are tender. Sprinkle with parsley. Add in lowfat sour cream or possibly cheese to each serving, as desired.
