- Mix cornmeal with boiling water - remove pot from stove and add in cornmeal SLOWLY (to prevent lumping). Set pot into hole ordinarily covered by a plate on the top of the wood stove. Stirring constantly. I use medium heat on my electric stove. Grandma stirred the polente throughout the cooking time. I cover my polente pot and simmer till cooked; about 30-45 min. I uncover it and stir it about every 10 min. Add in butter before removing from heat. Stir well. Serve warm in individual plates - serve rabbit over it.
