- Measure flour into bowl; make well in center and add in egg yolks, egg and salt. With hands mix thoroughly. Add in water 1 tbsp at a time mixing thoroughly with each addition. Add in only sufficient to create dough into a ball.Turn dough on well lightly floured cloth-covered board. Knead till smooth and elastic 10 min. Cover and let rest 10 min then either roll into a paper thin rectangle and cut into strips or possibly follow the directions on a pasta machine and roll into a #4 setting before cutting.
- Cook in boiling salted water to taste. If not using noodles immediately either let dry till hard and store in paper bag or possibly freeze.
