- 2 Tbsp. Vegetable oil
- 1 x Onion, minced
- 1/4 tsp Turmeric
- 1/4 tsp Grnd cinnamon
- 1/2 c. Rice
- 1/4 lb Dry apricots, cut into thin strips
- 1/2 c. Minced fresh Parsley
- 8 c. Chicken stock or possibly water
- 1 c. Cooked chick peas
- Â Â Salt and pepper
- 1/4 c. Fresh mint leaves
- 1/2 lb Grnd lamb
- 1/2 c. Pine nuts, toasted
- 1/2 x Onion, minced
- 1/2 tsp Grnd cinnamon
- 1/4 tsp Salt
- 1/4 tsp Freshly grnd pepper
Инструкции
- To make the lamb balls, mix all ingredients till well combined. Form into walnut sized balls and set aside.
- To make the soup, in a large pot, heat oil over medium heat. Lower heat and cook onion over low heat till golden brown , about 6 min. Stir in turmeric, cinnamon and rice. Cook rice till transluscent, about 3 min. Add in apricots, parsley and stock. Bring to a boil and add in lamb balls. Reduce heat and simmer about 20 min. Add in chick peas and cook another 5 min. Taste for salt and pepper. Serve garnished with mint leaves.
