- 4 x Large eggs
- 2 c. sugar
- 1 c. oil
- 2 c. unbleached flour
- 2 tsp baking pwdr
- 1 1/2 tsp baking soda
- 1 tsp grnd cinnamon
- 1 tsp vanilla extract
- 3 c. shredded fresh beets
- 1 c. minced walnuts
- 8 ounce cream cheese softened
- 1/2 c. whipping cream - (to 3/4 c.)
- 1 tsp almond extract
- 1/2 c. powdered sugar

- For the Cake: Beat together the Large eggs, sugar and oil till fluffy. Sift together the flour, baking pwdr, baking soda and cinnamon in a large bowl. Add in the dry ingredients to the egg mix and stir well to blend. Add in the vanilla, beets and walnuts. Beat together 1 minute.
- Pour the batter into a 13- by 9-inch baking pan. Bake the cake at 350 degrees till a toothpick inserted in the middle comes out clean, 35 to 45 min.
- For the Cream Cheese Frosting: Blend together the cream cheese, whipping cream, almond extract and powdered sugar in a blender or possibly mixer till fluffy. Spoon onto the cooled cake or possibly serve separately to dollop the cake.
- This recipe yields 12 servings.
