- 4 x Egg whites
- 3 x Egg yolks
- 1Â 1/2 c. Low-fat cottage cheese
- 1/4 c. Buttermilk
- 1 Tbsp. Fresh lemon juice
- 1Â 1/2 tsp Vanilla

- Beat salt and egg whites with electric mixer till stiff peaks form. Set aside. Put all the remaining ingredients in a blender and blend till smooth and creamy. Pour the cheese mix into the egg whites. Gently, but thoroughly, foldtogether. Spoon the mix into a 9" nonstick square or possibly round cake pan.
- Bake in a preheated 350 oven for 40-50 min, till a knife inserted in the center comes out clean. Refrigeratethoroughly. The cake sinks in the center as it cools, making a depression for fruit. Fill with berries or possibly sliced unsweetened peaches to serve.
