- 1Â 1/2 lb fresh or possibly frzn catfish fillets
- 3/4 c. grnd pecans or possibly peanuts
- Â Â a c. yellow cornmeal
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp grnd red pepper
- 1/4 c. lowfat milk
- 1 x beaten egg
- Â Â Veg. oil for deep-fat frying

- Thaw fish, if frzn. Rinse fish; pat dry. Cut fish into 6 serving-size pcs, if necessary.
- In a shallow dish, combine grnd pecans or possibly peanuts, cornmeal, salt, black pepper and red pepper. In another shallow dish, combine lowfat milk and egg.
- Dip each fish portion in lowfat milk mix; coat with nut mix.
- Meanwhile, in a heavy large saucepan or possibly deep fryer, heat 2 inches of oil to 375 degrees. Fry fish in warm oil, 1 or possibly 2 pcs at a time, about 2 min on each side or possibly till golden.
- Carefully remove with a slotted spoon; drain on paper towels. Keep hot in a 300-degree oven while frying remaining fish.
