%3C/p%3E%3Cp%3EBefore%20I%20get%20into%20my%20sugary%20post,%20I'd%20like%20to%20remind%20everyone%20who's%20interested,%20about%20December's%20roundup%20for%20%22Family%20Recipes:%20Memories%20of%20Family,%20Food%20and%20Fun%22.%20The%20deadline%20to%20send%20me%20your%20family%20recipes%20is%20December%2030.%20Go%20here%20to%20read%20all%20the%20rules.%20While%20you're%20cooking%20up%20your%20old%20family%20recipes%20for%20the%20holidays,%20just%20send%20me%20the%20link%20to%20your%20recipe,%20a%20picture%20and%20you%20can%20be%20in%20the%20roundup!%3C/p%3E%3Cp%3ENow,%20for%20the%20Peanut%20Butter%20Fudge!%20I'm%20not%20a%20master%20candy%20maker,%20but%20my%20Mother%20taught%20me%20how%20to%20make%20fudge,%20so%20I%20usually%20make%20it%20at%20Christmas%20time.%20Mom%20made%20chocolate%20fudge%20every%20year%20that%20I%20can%20remember,%20and%20later%20when%20I%20married,%20I%20learned%20how%20to%20make%20Peanut%20Butter%20Fudge.%20It's%20not%20hard,%20but%20you%20do%20have%20to%20plan%20for%20time%20to%20do%20it.%20You%20must%20have%20all%20the%20ingredients%20ready%20before%20you%20begin.%20Have%20the%20dish%20that%20is%20going%20to%20hold%20the%20fudge%20already%20buttered.%20Do%20not%20answer%20the%20phone-let%20the%20answering%20machine%20pick%20up%20your%20calls.%20If%20you%20get%20sidetracked,%20you%20can%20overcook%20the%20fudge,%20which%20is%20not%20a%20good%20idea.%20After%20saying%20all%20that,%20fudge%20does%20not%20take%20much%20time%20to%20make%20really,%20maybe%2020%20minutes%20from%20start%20to%20finish.%20So%20it's%20not%20time%20consuming%20to%20make,%20but%20you%20just%20can't%20leave%20it%20alone%20after%20starting.%20I%20learned%20how%20to%20make%20fudge%20the%20old%20fashioned%20way,%20by%20testing%20for%20the%20soft-ball%20stage%20using%20a%20bowl%20of%20cold%20water.%20Taking%20a%20spoon%20of%20the%20boiling%20candy%20liquid,%20you%20pour%20it%20into%20the%20bowl%20of%20cold%20water%20to%20see%20if%20it%20makes%20a%20soft%20ball.%20With%20your%20finger,%20you%20try%20pushing%20the%20syrup%20into%20a%20soft%20ball.%20If%20removed%20from%20the%20water,%20the%20ball%20will%20lose%20its%20shape.%20This%20is%20called%20the%20soft%20ball%20stage.%20The%20easiest%20way%20to%20do%20this%20is%20by%20using%20a%20candy%20thermometer.%20Clip%20it%20to%20the%20side%20if%20the%20pan%20and%20when%20the%20boiling%20syrup%20reaches%20235%20degrees,%20it%20is%20at%20the%20soft%20ball%20stage.%3C/p%3E%3Cp%3EBelieve%20it%20or%20not,%20the%20weather%20can%20affect%20your%20candy.%20If%20the%20air%20is%20humid,%20the%20cooking%20time%20can%20be%20longer%20and%20the%20candy%20may%20take%20longer%20to%20set%20up.%20If%20possible,%20make%20your%20candy%20on%20a%20day%20with%20low%20humidity.%20I%20found%20this%20yummy%20recipe%20in%20an%20old%20church%20cookbook%20that%20I've%20had%20since%20before%20I%20was%20married.%20Translation:%20I've%20had%20this%20about%2035%20years,%20but%20it's%20a%20good%20one!%20The%20fudge%20is%20rich,%20creamy%20and%20decadent%20and%20so%20delicious%20that%20I%20doubled%20the%20recipe!%20I%20promise%20that%20I%20gave%20half%20of%20it%20away!%20This%20fudge%20is%20far%20too%20tempting%20to%20have%20a%20large%20pan%20lingering%20in%20my%20house,%20because%20I'm%20weak,%20very%20weak.%20Use%20the%20best%20ingredients%20that%20you%20can%20afford%20as%20sometimes%20off%20brands%20do%20not%20perform%20well.%20This%20recipe%20makes%20a%20small%20pan%20of%20fudge,%20so%20it's%20a%20good%20one%20to%20start%20with.%20Let's%20begin,%20shall%20we?%3C/p%3E%3Cp%3EButter%20a%208x8%20inch%20pan%20and%20set%20aside.%20In%20a%20large,%20heavy%20bottomed%20pan,%20combine%20the%20sugar%20and%20milk.%20Heat%20pan%20over%20medium%20heat%20until%20the%20sugar%20mixture%20comes%20to%20a%20rolling%20boil.%20A%20rolling%20boil%20means%20that%20there%20will%20be%20lots%20of%20large%20bubbles%20breaking%20the%20surface%20of%20the%20mixture%20as%20it%20cooks.%20The%20syrup%20will%20rise%20high%20up%20in%20the%20pan,%20so%20make%20sure%20you%20do%20use%20a%20large%20pot.%20Clip%20a%20candy%20thermometer%20inside%20the%20rim%20of%20the%20pan,%20making%20sure%20it%20reaches%20into%20the%20hot%20syrup.%20Carefully%20stir%20the%20boiling%20syrup%20with%20a%20wooden%20spoon%20to%20keep%20it%20from%20sticking.%20Continue%20to%20cook%20the%20fudge%20to%20the%20soft%20ball%20stage,%20235%20degrees%20F.%20Remove%20the%20pan%20from%20the%20burner%20and%20stir%20in%20the%20butter,%20vanilla%20and%20peanut%20butter.%20Stir%20until%20the%20fudge%20starts%20to%20thicken%20and%20the%20ingredients%20are%20well%20combined.%20There%20should%20not%20be%20visible%20white%20streaks%20from%20the%20marshmallow%20cream.%20Carefully%20pour%20the%20hot%20fudge%20into%20the%20prepared%20pan.%20Do%20not%20scrape%20the%20hot%20fudge%20off%20the%20sides%20of%20the%20pan,%20as%20it%20will%20contain%20hardened%20sugar%20crystals%20that%20will%20tend%20to%20make%20your%20fudge%20grainy.%20Smooth%20out%20the%20fudge%20and%20let%20it%20cool%20away%20from%20the%20hot%20stove.%20It%20will%20take%20at%20least%202%20hours%20to%20completely%20cool,%20maybe%20more.%20Cut%20into%20squares%20and%20enjoy%20this%20creamy%20confection!%20This%20fudge%20may%20be%20stored,%20covered,%20in%20the%20refrigerator%20for%202%20weeks%20or%20more.%20Let%20it%20come%20to%20room%20temperature%20before%20serving.%20However,%20I've%20never%20had%20a%20pan%20of%20fudge%20last%20that%20long.%20I%20add%20it%20to%20goodie%20trays%20and%20we%20eat%20the%20rest.%20This%20is%20awesome%20Peanut%20Butter%20Fudge!%3C/p%3E%3Cp%3ENOTE:%20Some%20recipes%20suggest%20using%20a%20wet%20pastry%20brush%20to%20wash%20down%20the%20sides%20of%20the%20pan%20as%20the%20fudge%20cooks,%20to%20keep%20sugar%20crystals%20from%20forming.%20I%20have%20not%20tried%20this,%20so%20if%20you%20have%20and%20it%20works,%20please%20let%20me%20know%20in%20the%20comments!%3C/p%3E){kind=link}
