- 1 1/2 cups dried fruit, chopped (I used apricots and cranberries)

- 2 1/4 cups flour

- 1/2 teaspoon salt
- 4 tablespoons butter
- 2 tablespoons coconut or vegetable oil
- 2/3 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 2/3 cup skim milk
- coarse turbinado sugar for topping

%3C/p%3E%3Cp%3EI%20try%20to%20make%20one%20brand-new-to-me%20recipe%20each%20year%20at%20holiday%20time;%20for%202012,%20it%20was%20panettone.%20It%20was%20beautiful%20and%20fun%20to%20make%20--%20not%20to%20mention%20yummy.%20This%20year,%20for%20my%20new-to-me%20recipe,%20I%20decided%20to%20try%20a%20riff%20on%20traditional%20panettone%20that's%20a%20little%20bit%20easier%20to%20make%20and%20doesn't%20require%20any%20special%20baking%20paper:%3C/p%3E%3Cp%3EPanettone%20muffins.%3C/p%3E%3Cp%3EThese%20really%20are%20more%20muffin%20than%20panettone,%20to%20be%20perfectly%20honest.%20But%20if%20you're%20a%20fan%20of%20the%20butter,%20fruity%20panettone%20flavor,%20you're%20going%20to%20love%20these%20muffins.%3C/p%3E%3Cp%3EMuch%20like%20my%20favorite%20holiday%20bourbon%20pecan%20cake,%20these%20panettone%3C/p%3E%3Cp%3Emuffins%20have%20that%20yummy%20hint%20boozy%20flavor%20from%20soaking%20the%20dried%20fruit%3C/p%3E%3Cp%3Ein%20bourbon%20prior%20to%20cooking.%20While%20I%20like%20to%20eat%20them%20plain,%20feel%20free%20to%20spread%20some%20butter%20or%20jam%20on%20them%20if%20you%20want%20a%20little%20extra%20sweetness.%20Also,%20we%20love%20them%20for%20breakfast%20but,%20as%20with%3C/p%3E%3Cp%3Etraditional%20panettone,%20they%20make%20a%20fantastic%20snack,%20accompanied%20by%20a%20nice%20cup%20of%20homemade%20eggnog%20--%20especially%20when%20you%3C/p%3E%3Cp%3Egrow%20weary%20of%20the%20endless%20barrage%20of%20Christmas%20cookies.%3C/p%3E%3Cp%3EDo%20you%20have%20a%20traditional%20holiday%20baking%20breakfast%20favorite?%20Leave%20a%20comment%20below:%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3EPanettone%20Muffins%20(adapted%20from%20King%20Arthur%20Flour)%3C/p%3E%3Cp%3EMakes%201%20dozen%20muffins%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20the%20dried%20fruit%20and%20bourbon%20in%20a%20small%20bowl.%20Cover%20and%20let%20stand%20overnight.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20In%20a%20small%20bowl,%20whisk%20together%20the%20flour,%20baking%20powder%20and%20salt;%20set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20mixer,%20cream%20the%20butter,%20oil%20and%20sugar%20until%20smooth%20and%20fluffy.%20Beat%20in%20the%20eggs,%20then%20mix%20in%20the%20vanilla.%20Alternately%20add%20the%20dry%20mixture%20and%20the%20milk%20to%20the%20butter%20mixture,%20mixing%20well%20in%20between%20each%20addition%20and%20beginning%20and%20ending%20with%20the%20dry%20mix.%20Lastly,%20gently%20mix%20in%20the%20soaked%20fruit%20and%20whatever%20liquid%20may%20be%20left%20in%20the%20bowl.%3C/p%3E%3Cp%3ESpoon%20the%20batter%20into%20a%20prepared%20muffin%20tin,%20filling%20each%20cup%20quite%20full.%20Generously%20sprinkle%20the%20tops%20of%20each%20muffin%20with%20the%20coarse%20sugar%20and%20bake%20for%20about%2020%20minutes%20or%20until%20a%20tester%20inserted%20comes%20out%20clean.%20Cool%20for%202-3%20minutes%20in%20the%20pan%20and%20then%20remove%20them%20to%20cool%20completely%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
