Clever and wonderful avocado corn dogs at Palo Alto Grill.
Downtown Palo Alto has a bevy of talented chefs. But now, it also has the acclaimed Ryan Shelton, who’s the executive chef and partner of the Palo Alto Grill, which opened its doors in April.
A San Jose native, Shelton has amassed quite a reputation, having worked in Europe and Asia before becoming pastry chef at Chez TJ in Mountain View, then chef de cuisine at Baume in Palo Alto, where he helped that restaurant garner two Michelin stars. Most recently, he helmed the kitchen at vintner Randall Grahm’s Le Cigare Volant in Santa Cruz.

%20under%20the%20small%20plates%20portion%20of%20the%20menu.%20There%20are%20no%20hot%20dogs%20in%20this%20version.%20But%20you%20don%E2%80%99t%20miss%20them.%20What%20you%20get%20instead%20are%20nuggets%20of%20creamy%20avocado%20on%20sticks%20that%20are%20breaded%20in%20the%20familiar%20cornmeal%20batter,%20then%20fried%20until%20golden.%20The%20sweetness%20of%20the%20batter%20plays%20nicely%20with%20the%20richness%20of%20the%20avocado.%20A%20chipotle%20mustard%20sauce%20adds%20smokiness%20and%20a%20dash%20of%20spiciness.%20It%E2%80%99s%20the%20kind%20of%20nosh%20all%20too%20easy%20to%20reach%20for%20in%20the%20company%20of%20a%20cold%20beer.%20Three%20come%20to%20an%20order.%20So,%20if%20there%E2%80%99s%20two%20of%20you,%20you%20may%20end%20up%20fighting%20over%20the%20last%20one.%20Just%20sayin%E2%80%99.%3C/p%3E%3Cp%3EWe%20were%20intrigued%20by%20the%20side%20of%20triple-cooked%20fries%20($5).%20Typically,%20twice-fried%20fries%20are%20supremely%20crisp,%20so%20we%20wondered%20if%20triple%20frying%20them%20would%20make%20them%20even%20more%20so.%20The%20thick%20fries%20were%20crisp,%20but%20not%20overtly%20so.%20But%20they%20were%20incredibly%20creamy%20inside.%20They%20come%20with%20house-made%20ketchup%20and%20aioli%20%E2%80%94%20another%20nice%20touch.%3C/p%3E%3Cp%3ETriple-cooked%20fries.%3C/p%3E%3Cp%3EMy%20friend%20Donna%20made%20a%20beeline%20for%20the%20%E2%80%9CPan-Seared%20Southern%20Gentleman,%E2%80%9D%20an%20Angus%20fillet%20mignon%20available%20in%20two%20sizes:%208%20ounces%20for%20$38%20(which%20she%20chose)%20and%2012%20ounces%20for%20$48.%3C/p%3E%3Cp%3EThe%20smaller%20version%20of%20the%20fillet%20mignon.%3C/p%3E%3Cp%3EAn%20assortment%20of%20salts%20to%20season%20your%20steak.%3C/p%3E%3Cp%3EIt%20was%20juicy%20and%20nicely%20cooked,%20and%20served%20alongside%20a%20small%20mound%20of%20bacon-studded%20mustard%20greens.%20The%20steak%20also%20came%20with%20a%20trio%20of%20salts%20%E2%80%94%20fleur%20de%20sel,%20smoked%20Maldon%20and%20black%20volcanic%20salt%20%E2%80%94%20so%20that%20you%20could%20season%20it%20to%20your%20specific%20liking.%3C/p%3E%3Cp%3EBecause%20the%20small%20plates%20section%20of%20the%20menu%20had%20so%20many%20wonderful%20sounding%20dishes,%20I%20opted%20to%20order%20one%20as%20a%20stand-in%20for%20an%20entree.%20First%20up,%20grilled%20Japanese%20octopus%20($14),%20which%20was%20as%20tender%20as%20can%20be,%20not%20always%20an%20easy%20feat.%20Fingerling%20potatoes%20completed%20the%20plate%20with%20the%20brightness%20of%20lemon%20and%20basil.%3C/p%3E%3Cp%3EGrilled%20octopus%20with%20potatoes.%3C/p%3E%3Cp%3EA%20beautiful%20crudo%20dish.%3C/p%3E%3Cp%3ENext,%20I%20opted%20for%20a%20selection%20from%20the%20raw%20plates%20side%20of%20the%20menu:%20Yellowtail%20crudo%20%E2%80%9Cwatercolor%E2%80%9D%20($12).%20It%20was%20gorgeous%20to%20behold,%20arrayed%20on%20a%20square%20plate%20with%20Asian%20characters,%20and%20arranged%20with%20edible%20flowers,%20crisped%20puffed%20rice,%20and%20sweet,%20thin%20rounds%20of%20plum.%20The%20softness%20of%20the%20plum%20mimicked%20the%20texture%20of%20the%20fish,%20but%20added%20a%20fresh%20fruitiness.%3C/p%3E%3Cp%3EFor%20dessert,%20the%20blackberry%20tart%20($9)%20with%20its%20petite%20size%20is%20perfect%20for%20those%20who%20want%20just%20a%20morsel%20of%20sweetness%20to%20end%20the%20night.%20The%20bottom%20of%20the%20tart%20is%20more%20like%20a%20butter%20cookie%20rather%20than%20a%20traditional%20pastry%20round.%20Although%20nice%20and%20crisp,%20I%E2%80%99m%20not%20sure%20it%20was%20necessarily%20an%20improvement%20on%20the%20usual%20flaky%20pastry.%20A%20touch%20of%20chamomile%20added%20a%20floral%20quality%20that%20really%20complimented%20the%20berries.%3C/p%3E%3Cp%3EBlackberry%20tart.%3C/p%3E%3Cp%3EBeignets%20with%20sweet%20strawberries.%3C/p%3E%3Cp%3EThe%20brioche%20beignets%20($9)%20are%20fluffy%20and%20dusted%20with%20sugar.%20They%20sit%20atop%20macerated%20sweet%20strawberries.%20An%20espresso%20cup%20sits%20alongside,%20holding%20a%20frothy%20strawberry%20milk.%20It%E2%80%99s%20too%20thin%20for%20dunking,%20so%20we%20just%20took%20%20sips%20of%20it%20instead.%3C/p%3E%3Cp%3EMore:%20My%20Dinner%20at%20Baume%20in%20Palo%20Alto%3C/p%3E%3Cp%3EPlus%20Other%20Downtown%20Palo%20Alto%20Establishments:%20Sliderbar%3C/p%3E%3Cp%3EAnd:%20Amber%20Dhara%3C/p%3E%3Cp%3EAnd:%20Campo%20185%3C/p%3E%3Cp%3EAnd:%20Chantal%20Guillon%3C/p%3E%3Cp%3EShare%20and%20Enjoy%3C/p%3E){kind=link}
