- 4 lb Beef tongue
- Â Â Onion
- 5 x Peppercorns
- 3 quart Water
- 2 x Bay leaves
- 3 tsp Sugar, granulated
- 1 Tbsp. Butter, unsalted
- 2 c. Broth from boiling tongue
- 1 tsp Vinegar
- 1/2 tsp Lemon rind
- 1/2 c. Almonds, blanched, minced
- 3 tsp Water
- 1 Tbsp. Flour, all purpose
- 2 tsp Lemon juice
- 1/2 c. Raisins
Инструкции
- Boil tongue with other ingredients till tender, about 2 hrs. Cold.
- Remove outside skin and roots. Slice thin. Save broth. Make Sauce.
- Sauce: Carmelize the sugar and water. Add in butter,flour and broth and boil to the bubbling stage. Add in remaining ingredients. Add in sliced tongue and bring to a boil.
