Рецепт Outstanding Smoked Goose Breasts
This is a very easy way to prepare wild Goose. Total prep time is about 15 min with 5-7 hours of smoking. I started doing this about 4 years ago and it now the only way I do my geese. Once people know that I have a batch it doesn't last long.

- Skinned and boneless goose breasts (amount depends on size of smoker)
- Sea Salt
- Fresh Ground Pepper
- Cumin
- Coriander
- Mrs Dash Yellow label
- Cayenne Pepper to taste

- Rinse goose breasts and pat dry
- place on a large cookie sheet skinned side up
- add a sprinkle of salt to taste on all breasts

- Mrs dash
- and Cayenne
- This a dry rub so try to get an even coat of the ingredients on each breast
- Place in smoker (I use a Bradley)
- I use the Special Blend wood but have also used Hickory
- Smoke on low temp for the first 1.5 hours with smoke and then gradually raise the temp
- Cooking can take up to 7 hours for a large batch (20 breasts)
- They should be done to med rare.
- Once they are done store them in the fridge overnight in an unsealed bag
- Once this is done you can vacuum seal them and freeze
- To serve cut very thin pieces and serve with cheese and crackers
- Be prepared to have extra ready once people try them they go fast
