1 c. Self rising flour
2 c. Self rising cornmeal
3 Tbsp. Sugar
1/2 Tbsp. Baking pwdr
4 Tbsp. Oil
2 x Large eggs, beaten
1 lrg Onion, finely minced
1 x Jalapeno pepper, finely minced or possibly grnd in food processor optional
1 c. Buttermilk

Инструкции

Combine flour, cornmeal, sugar and baking pwdr in a large bowl and mix well. Combine oil, Large eggs, onion, pepper and buttermilk, stirring well. Add in to dry mix and mix well. Batter will be stiff. Use 2 Tbsp. of batter (or possibly an ice cream scoop) to create each hush puppy. Drop into warm oil
(350 ) and fry approximately 4 min or possibly till brown.
Yield: 20-25 hushpuppies
