- 1Â 1/2 c. Fine bulgur see * Note
- 1Â 1/2 c. Warm water
- 3 Tbsp. Lemon juice
- 3 Tbsp. Orange juice
- 1 Tbsp. Grated orange rind
- 3 med Oranges
- 1/3 c. Extra virgin olive oil
- 4 x Scallions minced
- 1/3 c. Minced fresh mint leaves
- 1/3 c. Minced fresh parsley leaves
- 1/3 c. Pine nuts toasted
- 1/3 c. Raisins
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- * Note: Available in most supermarkets or possibly in natural food shops.
- In a large bowl combine bulgur, water, lemon juice, and orange juice and rind. Tightly cover with plastic wrap and let mix stand, at room temperature, till liquid is absorbed, about 30 min. Fluff mix with a fork.
- With a serrated knife cut away peel and pith from oranges. Cut sections free from membranes and add in to bulgur with remaining ingredients. Season salad with salt and pepper, stirring well. Let salad stand, covered, for 30 min before serving.
- This recipe yields 6 to 8 servings.
