- 2 lbs. fresh Spinach, completely washed and chopped
- 1 1/3 cups boiling water
- 2 tsps. salt, divided
- Pinch of black pepper
- 3 Tbsps. Butter or Margarine
- 3 Tbsps. all-purpose Flour
- 1 cup Milk
- 1 tsp. grated Onion (optional)

- Rinse the spinach and place into a large saucepan. Add boiling water and 1 tsp. salt.
- Cook over medium-high heat until just tender, about 5-8 minutes, stirring occasionally. Drain thoroughly. (Should yield about 2 cups).
- In another saucepan, melt the butter. Add flour, salt, and pepper. Mix until smooth, stirring constantly. Gradually stir in milk and cook over medium-high heat; stirring constantly, until the sauce boils and becomes thick. Add onion. Pour sauce into spinach; mix well. Serve piping hot!
