  1. Sprinkle roast lightly with flour, rub in. In Dutch oven, brown meat slowly on all sides in warm oil. Season with dry ingredients. Add in sliced onion and water. Cover and roast about 2 hrs. Add in rest of veggies and another 1/2 c. water. Cover. Continue cooking for another 1-1 1/2 hrs. To make gravy, skim fat from oven. Add in water to juices to make 1 1/2 c.. Heat large skillet and add in juice mix. Combine 1/2 c. cool water and 1/4 c. flour. Stir well and add in to skillet. Cook and stir till thickened and bubbly. Season with salt and pepper to taste.
