- 125 gm butter
- 90 gm sugar
- 1 Tbsp. peanut butter
- 1 x egg yolk
- 200 gm plain flour
- 25 gm rice flour
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 100 gm peanuts toast, skin and split into halves
- 1 x egg white--beat lightly

- MethodGREASE baking trays with corn oil or possibly melted butter. Preheat oven to 180 C. Cream butter, sugar, egg yolk and peanut butter till pale. Add in sifted ingredients and mix well into a dough.
- Place dough in between plastic sheets and roll out to 3/4cm thickness. Cut out with a cookie cutter and place on prepared trays. Brush lightly with egg white.
- Press peanuts on cookies and bake in preheated oven for 13 to 15 min or possibly till golden. Leave cookies on baking tray for 1 to 2 min, then transfer
