- 3 lb russet potatoes
- 2 Tbsp. white wine vinegar
- 1Â 1/2 tsp dry mustard
- 3/4 c. mayonnaise
- 1/2 c. lowfat sour cream
- 2 Tbsp. sugar
- 1Â 1/2 tsp Hungarian warm paprika
- 1 x green bell pepper diced
- 1 x red bell pepper diced
- 2 x celery stalks diced
- 4 x hard-boiled Large eggs chilled, shelled and sliced (optional)
- Â Â Minced fresh parsley

- Cover potatoes with salted water in large pot. Cover and boil gently till potatoes are tender but still hold their shape, about 30 min.
- Drain and cold slightly. Peel and cut into 1-inch pcs. Transfer potato pcs to large bowl.
- Stir vinegar and mustard in medium bowl till mustard dissolves. Fold in mayonnaise, lowfat sour cream, sugar and paprika. Add in bell peppers and celery.
- Pour dressing over hot potatoes; toss gently. Season with salt and pepper. Cold completely. (Can be prepared 1 day ahead. Cover and chill.) Garnish with sliced Large eggs and minced parsley. Serve at room
- temperature.
- Serves 8.
