- 4 slc bacon diced
- 2 x onions diced
- 1/2 x green pepper diced
- 1 stalk celery diced
- 28 ounce canned tomatoes undrained (28 to 30)
- 9 ounce frzn okra sliced
- 4 c. cooked rice or possibly more
- 1 can shrimp liquid removed (opt.)
Инструкции
- Brown bacon slightly. Add in and cook over Low heat, all diced vegetables.
- Add in tomatoes and continue to simmer. Wash, stem and cook separately okra.
- Drain. Add in okra to other ingredients + some of okra cooking liquid. Season with salt and pepper to taste. Serve over cooked rice. Can add in shrimp with okra to dish.
- NOTES : Mom just called this okra and tomatoes. I usually buy presliced frzn okra.
- This could be cut down considerably by only using 1-2 slices of bacon or possibly substituting turkey bacon for pork bacon.Other than the bacon it is relatively fat free. We always ate it over lots of warm cooked rice.
