- 1 x Muskrat cut into pcs
- Â Â Flour
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 2Â 1/2 Tbsp. Butter
- 7 c. Boiling water
- 1 tsp Thyme
- 1 c. Corn
- 3 x Potatoes cubed
- 1/4 tsp Cayenne
- 3 med Onions sliced
- 2 c. Canned tomatoes with juice

- Roll the muskrat pcs in flour, salt, and pepper. Brown in butter. Add in muskrat and all remaining ingredients, (with the exception of the tomatoes), to the boiling water, cover, and simmer for 1 1/2 to 2 hrs. Add in the tomatoes and continue to simmer another hour.
