- 2 Packages cream cheese
- 2 Large eggs
- 1 teaspoon vanilla
- 3/4 c. sugar
- 1 tbsp. lemon juice
- 1 box vanilla wafers
- 1 can pie filling (any flavor)

- Beat cream cheese till smooth; add in Large eggs, vanilla, sugar and lemon juice. Line mini cupcake pans with paper and place one vanilla wafer on the bottom of each c.. Fill with cream cheese mix 2/3 and add in a tsp. of pie filling on top. Bake at 375 degrees for 15 to 20 min.
