- 8 ounce. pkg. of cream cheese
- 6 tbsp. sugar
- 1 egg
- 1/2 teaspoon vanilla

- Cream above ingredients and spread 1/2 inch thick on a vanilla wafer placed in a small muffin paper.
- Place filled muffin papers in a muffin pan and bake at 350 degrees for 15 min.
- Cold completely.
- When completely cooled, top each mini cheese cake with a dab of prepared whipped topping. Finish off with a tsp. of cherry pie filling or possibly strawberry pie filling. Makes about 20.
