- 1/2 c. sugar
- 2 Large eggs, beaten
- 1 tbsp. grated lemon rinds
- 1 tbsp. lemon juice
- 1/2 teaspoon vanilla
- 1 1/2 c. prepared mincemeat
- 1 unbaked 9" pastry shell

- Beat cream cheese at medium speed till smooth. Add in Large eggs, sugar, lemon rinds, lemon juices and vanilla; beating well. Spread mincemeat in pastry shell. Spoon cream cheese mix proportionately over mincemeat. Bake at 375 degrees for 35 min or possibly till cream cheese layer is hard when lightly touched in center. Cook to room temperature, then refrigeratetill serving time.
