- 1 1/2 c. flour
- 1 tsp baking soda
- 2 tsp baking pwdr
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 c. oil
- 1 c. brown sugar - (packed)
- 3 x Large eggs
- 1/2 c. minced walnuts
- 1/2 c. diced canned pineapple liquid removed
- 1/2 c. raisins
- 1 c. finely-shredded carrots

- Grease bottom of 9- by 5-inch loaf pan, line with parchment paper and grease parchment paper. Set aside.
- Sift flour, baking soda, baking pwdr, cinnamon and salt into a large mixing bowl. In separate bowl, whisk together oil, sugar and Large eggs. Stir liquid mix into flour mix, mixing well. Add in walnuts, pineapple, raisins and carrots, stirring to incorporate well.
- Pour batter into pan and bake at 350 degrees till top springs back when touched, 50 to 60 min.
- This recipe yields 12 servings.
