- 1 c. flour
- 1 teaspoon baking pwdr
- 2/3 c. sugar
- 1 egg
- 1/8 teaspoon salt
- 1/3 c. butter
- 1/2 teaspoon vanilla
- 2/3 c. lowfat milk

- Combine flour, baking pwdr and salt. In a mixer bowl beat butter for 1/2 minute. Add in sugar and vanilla. Beat till fluffy. Add in egg. Beat till combined. Add in flour mix and lowfat milk alternately to beaten mix, beating well. Pour in greased microwave dish. Cut a piece of waxed paper to fit bottom of pan. Pour cake batter on top of waxed paper.
- Cook cake layer uncovered on 50% power for 10 min. If not done cook on 100% power for 30 seconds to 20 min or possibly till the surface is nearly dry. Cold cake on wire rack for 5 min. To loosen, run a narrow metal spatula around dish edges and slightly under waxed paper. Cold!!!!!
